Kohren lotus root powder

Kohren is a fine powder of ground dried lotus root. Among other things, lotus sweets are made from it, which can also serve as a bonbon. The rhizomes of the plant growing along the bottom are used to make tea. The main components of these rhizomes include aspargine, nelumbine and starch.

The rhizomes of the lotus are harvested in winter; the time when the nutrient content is highest. To make kohren, these rhizomes are crushed and chopped. The debris is then sifted out to remove the fibers and ground into a fine powder.
